Canned food has improved in quantity, quality, and variety the diet of the urban working populations of the western world. When I went shopping I only buy one brand canned food, because I like this brand taste. Some brand canned food always have the same taste.

The immediate factors that made this possible were developments in four basic areas: 1) preserving 2) mechanization 3) retailing 4) transport.
Preserving when we are talking about the food preserving, we are talking about the temperature, oxygen, humidity, HP and time. Usually the dangers food temperature zone is between 4C to 60C, HP is around 7. Bacteria in the food need enough oxygen. Canned food is airproofed, and salted. Although the temperature is in danger zone which is room temperature but the oxygen is limited. So it is good for preserving.
Freezing The artificial freezing of foodstuffs played and important part on the processes of preservation. Ice become widely used in American for transporting food on the railroad.
Mechanization Canned food is made by machine. They are prepared by the assembly line which is every small step to make food separated by machine. For example, the food cut of the quality of taste, package, everything is mechanization. There are three levels during the mechanization. 1. in the mechanization of the production of food especially in agriculture 2. in the mechanization of the preparation of the food, cleaning, peeling, podding, etc. 3. in the mechanization of the canning itself.
Transport Transportation is strengths for canned food. Today we are using container during the transportation. The container is limited space. When we are packaging the canned food, we can transport more food once than not canned food.
Adulteration under the new dispensation
Adulteration is a feature of the growth of urban society, or rather of urban or rural society that is divorced from primary production. The adulteration of food continued to be a problem for the industrialization of cooking, particularly in these early days.
The effect of these changes on the diet and cuisine was enormous. A great deal of domestic work was now done before the food ever entered the kitchen. Many foods were already partly or fully processed, and even sold in a ready-to-eat form. A drain on the limited resources of foreign exchange, the demand for which is continuously expanding while plaint; these industrial foods of the West have now become incorporated into the meals of the Third World.
